    Prepare remoulade (optional)

    In a bowl, whisk together mayonnaise, Dijon mustard, lemon juice, finely chopped pickles, parsley, salt, and pepper. Cover and refrigerate while you cook the fish.

    Season the snapper

    Pat the 4 snapper fillets dry. Season both sides with kosher salt, black pepper, paprika, and garlic powder. Let rest 10 minutes to let the spices adhere.

    Make dredging and batter stations

    In a wide bowl, whisk together flour, cornstarch, baking powder, and a pinch of salt. In a separate bowl, whisk egg with cold beer and water until smooth.

    Dredge and batter the fish

    Lightly dredge each fillet in the flour mixture, tapping off excess. Dip into the beer batter until fully coated. Let excess batter drip back into bowl.

    Heat oil and fry

    Pour oil into a heavy skillet to a depth of about 2 inches (about 900 ml). Heat to 180°C (350°F). Fry fish in batches 3-5 minutes per side, until crisp and golden. Remove with a slotted spoon and drain on paper towels.

    Finish and serve

    Transfer fried snapper to serving plates. Serve with lemon wedges and a dollop of remoulade on the side or drizzled lightly over the fish.
