    Prepare the Vegetables

    Wash the fresh tomatoes thoroughly under cold water. Remove the stems and cut them into quarters. Peel and dice the onion. Mince the garlic cloves.

    Prepare the Basil

    Rinse the fresh basil leaves under cold water and pat them dry with a clean towel.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until translucent. Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant.

    Add Tomatoes and Broth

    Add the quartered tomatoes and vegetable broth to the pot. Stir well to combine all the ingredients.

    Season the Mixture

    Season the tomato mixture with salt, black pepper, and sugar. The sugar will help cut the acidity of the tomatoes.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Allow it to simmer for about 30 minutes, stirring occasionally.

    Blend the Soup

    After simmering, remove the pot from heat. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the mixture to a traditional blender in batches.

    Add Basil

    Stir in the fresh basil leaves into the blended soup and let it sit for another 5 minutes to infuse the flavors.
