Method

Burger Patties

  1. 1

    Prepare the Beef Blend

In a large bowl, combine the brisket and chuck beef. Use your hands to mix them together until well combined.

  2. 2

    Season the Meat

Add the salt, black pepper, garlic powder, and onion powder to the meat mixture. Mix gently until the seasonings are evenly distributed.

  3. 3

    Form Patties

Divide the meat mixture into 4 equal portions and shape them into patties, making a slight indentation in the center of each patty to prevent puffing during cooking.

  4. 4

    Chargrill the Patties

Preheat a grill or grill pan over medium-high heat. Place the patties on the grill and cook for about 4-5 minutes on each side, or until they reach your desired level of doneness.

  5. 5

    Melt the Cheese

During the last minute of grilling, place a slice of cheddar cheese on each patty and close the grill lid to melt the cheese.

Burger Assembly

  1. 6

    Prepare the Buns

Slice the brioche buns in half and lightly toast them on the grill until golden brown.

  2. 7

    Layer the Ingredients

On the bottom half of each toasted bun, place a generous amount of romaine lettuce, followed by the grilled patty with melted cheese.

  3. 8

    Add Tomato

Slice the tomato and place a slice on top of the patty. Top with the other half of the bun.

Pommes Frites

  1. 9

    Prep the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips for fries.

  2. 10

    Soak the Potatoes

Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and dry them thoroughly.

  3. 11

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  4. 12

    Fry the Potatoes

Carefully add the dried potato strips to the hot oil in batches. Fry until golden brown, about 4-5 minutes, then remove and drain on paper towels.

  5. 13

    Season the Fries

While the fries are still hot, sprinkle with salt to taste.
