Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Baguette
Slice the French baguette into 1-inch thick pieces.

Season the Baguette
In a small bowl, mix together olive oil, garlic powder, salt, and dried Italian herbs.

Brush and Bake
Brush both sides of each baguette slice with the olive oil mixture. Place the slices on a baking sheet and bake in the preheated oven for about 10-12 minutes, or until golden brown and crispy.

Soak the Potato Slices
Place the potato slices in a bowl of cold water for 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add a handful of potato slices to the hot oil. Fry for about 3-4 minutes or until they are golden brown and crispy. Remove the chips with a slotted spoon and place them on a paper towel-lined plate.

While the chips are still hot, sprinkle with salt, paprika, and black pepper to taste.

Serve the toasted baguette slices alongside the house-fried potato chips.
