Method

Base Preparation

  1. 1

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

  2. 2

    Mix Sugars and Eggs

In a large mixing bowl, combine granulated sugar and brown sugar. Add the large eggs one at a time, whisking until fully incorporated after each addition.

  3. 3

    Combine Mixtures

Pour the melted chocolate and butter mixture into the sugar and egg mixture. Stir until well combined.

  4. 4

    Add Dry Ingredients

Sift together the all-purpose flour, cocoa powder, and salt in a separate bowl. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.

  5. 5

    Bake the Base

Preheat your oven to 180°C (350°F). Grease a 9-inch round cake pan and pour the batter into it. Bake for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Filling Preparation

  1. 6

    Prepare the Filling

In a mixing bowl, combine mascarpone cheese, powdered sugar, and vanilla extract. Use a whisk to blend until smooth and creamy.

  2. 7

    Whip the Cream

In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.

  3. 8

    Fill the Base

Once the chocolate base has cooled, spread the mascarpone filling evenly over the top. Place in the refrigerator to chill for at least 1 hour.

Garnishing

  1. 9

    Garnish the Cake

Before serving, dust the top with cocoa powder. Decorate with chocolate shavings and fresh raspberries for a beautiful presentation.

  2. 10

    Slice and Serve

Slice the cake into wedges and serve chilled. Enjoy the rich, decadent flavors of 'The Fallen Saint'.
