Method

Preparation

  1. 1

    Measure Ingredients

Gather all the ingredients: stone-ground grits, water, salt, and butter. If using, prepare the cheddar cheese and any optional seasoning.

Cooking

  1. 2

    Boil Water

In a large saucepan, bring the 4 cups of water to a rolling boil over medium-high heat.

  2. 3

    Add Salt

Once the water is boiling, add 1 teaspoon of salt to the water.

  3. 4

    Stir in Grits

Gradually stir in 1 cup of stone-ground grits, making sure to whisk continuously to avoid clumps.

  4. 5

    Reduce Heat

Reduce the heat to low and cover the saucepan. Let the grits simmer for about 20-25 minutes, stirring occasionally.

  5. 6

    Add Butter

After the grits have thickened and cooked through, remove from heat and stir in 2 tablespoons of butter until melted and well incorporated.

  6. 7

    Optional Cheese Addition

If desired, stir in 1 cup of cheddar cheese until melted and creamy.

  7. 8

    Season to Taste

Taste the grits and add black pepper and hot sauce as desired.

Serving

  1. 9

    Serve Warm

Spoon the grits into bowls and serve warm, optionally garnished with additional cheese or hot sauce.
