Method

Preparing the Steak

  1. 1

    Season the Steak

Rub the beef tenderloin with salt and black pepper on all sides.

  2. 2

    Sear the Steak

Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned beef tenderloin and sear for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

  3. 3

    Rest the Steak

Remove the steak from the skillet and let it rest for about 5 minutes before slicing.

Preparing the Salad

  1. 4

    Chop the Romaine

Wash and chop the romaine lettuce into bite-sized pieces.

  2. 5

    Prepare the Tomato

Dice the tomato into small cubes.

  3. 6

    Crumble the Blue Cheese

Crumble the blue cheese into small pieces.

Making the Frites

  1. 7

    Cut the Potatoes

Peel and cut the russet potatoes into thin strips to make frites.

  2. 8

    Heat the Oil

Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C).

  3. 9

    Fry the Potatoes

Fry the potato strips in batches until they are golden brown and crispy, about 4-5 minutes. Remove and place them on paper towels to drain excess oil.

  4. 10

    Season the Frites

Sprinkle the fried potatoes with salt while they are still hot.

Making the Vinaigrette

  1. 11

    Mix the Ingredients

In a small bowl, whisk together the pepper jelly, apple cider vinegar, and olive oil until well combined.

  2. 12

    Season the Vinaigrette

Add salt and black pepper to taste, mixing well.

Assembling the Dish

  1. 13

    Slice the Steak

Thinly slice the rested steak against the grain.

  2. 14

    Combine Ingredients

In a large bowl, combine the romaine, diced tomato, and crumbled blue cheese. Toss gently.

  3. 15

    Plate the Dish

On a plate, arrange the salad mixture, top with sliced steak, and serve with frites on the side. Drizzle the pepper jelly vinaigrette over the salad and steak.
