Blanch the Haricots Verts
In a separate pot of boiling salted water, add the haricots verts and cook for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop cooking. Once cooled, drain again and set aside.

Prepare the Mixed Greens
In a large salad bowl, mix the mixed greens and set aside.
Cooking the Tuna

Season the Tuna Steaks
Rub the tuna steaks with olive oil, salt, and black pepper on both sides.

Sear the Tuna
Heat a skillet over high heat until hot. Add the tuna steaks and sear for 1-2 minutes on each side for medium-rare, or longer if desired. Remove from heat and let rest for a few minutes before slicing.
Making the Vinaigrette

Combine Ingredients
In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, Dijon mustard, honey, salt, and black pepper until emulsified.
Assembling the Salad

Combine the Salad Ingredients
In the large salad bowl with mixed greens, add the halved new potatoes, blanched haricots verts, and nicoise olives. Toss gently to combine.

Dress the Salad
Drizzle the lemon vinaigrette over the salad and toss lightly to coat the ingredients evenly.

Serve with Tuna
Slice the seared tuna and arrange on top of the salad. Serve immediately.
