Prepare Chicken

Season the Chicken
Preheat your oven to 400°F (200°C). Pat the chicken halves dry with paper towels. Rub olive oil all over the chicken halves. Season generously with salt and black pepper. Sprinkle fresh thyme and rosemary over the chicken.

Roast the Chicken
Place the chicken halves on a baking sheet, skin side up. Roast in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden.

Add Garlic and Finish the Sauce
Add minced garlic to the browned butter and sauté for about 1 minute until fragrant. Remove from heat and stir in lemon juice, lemon zest, and chopped parsley.
Prepare Pommes Frites

Cut and Soak Potatoes
Peel the russet potatoes and cut them into thin strips to make fries. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes
Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Drain and dry the potato strips thoroughly. Fry in batches until golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.
