    Prepare the Vegetables

    Wash and trim the asparagus, cutting off the tough ends. Halve the cherry tomatoes and mince the garlic cloves.

    Season the Fish

    Pat the redfish fillets dry with paper towels. Season both sides with salt and black pepper.

Cooking

    Pan Roast the Fish

    In a large skillet, heat olive oil over medium-high heat. Once the oil is hot, add the seasoned redfish fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy.

    Flip the Fish

    Carefully flip the fillets using a spatula and cook for an additional 3-4 minutes until the fish is opaque and flakes easily with a fork. Remove the fish from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add a bit more olive oil if needed, then add minced garlic, asparagus, and halved cherry tomatoes. Sauté for about 5-7 minutes until the asparagus is tender and the tomatoes are blistered.

Serving

    Plate the Dish

    On a serving plate, place a portion of the sautéed vegetables. Top with a redfish fillet. Squeeze fresh lemon juice over the fish and garnish with chopped parsley.

    Serve immediately while hot and enjoy your pan-roasted redfish!
