    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare Potatoes

    Peel the potatoes and slice them thinly using a mandoline or a sharp knife. Aim for slices about 1/8 inch thick.

    Melt Butter and Oil

    In a large skillet, melt the butter and olive oil over medium heat until combined.

    Season Potatoes

    In a large bowl, toss the sliced potatoes with salt, black pepper, and fresh thyme until evenly coated.

Cooking

    Layer Potatoes

    Arrange half of the seasoned potato slices in a circular pattern in the skillet, overlapping them slightly. Make sure to cover the bottom of the skillet completely.

    Cook First Side

    Cook the potatoes on medium heat for about 10-12 minutes, or until the bottom is golden brown.

    Flip and Layer Again

    Carefully flip the galette using a plate. Add the remaining potato slices on top, arranging them in a circular pattern. Cook for another 10 minutes.
