Pimento Cheese Preparation

Mix the Cheese Base
In a mixing bowl, combine the cream cheese and sharp cheddar cheese. Using a hand mixer or a spatula, blend until smooth and creamy.

Add Pimentos
Drain the pimentos from the jar and chop them roughly. Fold the pimentos into the cheese mixture until evenly distributed.

Season the Mixture
Add mayonnaise, garlic powder, onion powder, black pepper, and salt to the cheese mixture. Mix well to combine all ingredients. Taste and adjust salt as needed.

Chill the Mixture
Cover the bowl and refrigerate the pimento cheese for at least 30 minutes to allow the flavors to meld.

Prepare the Ingredients
While the pimento cheese is chilling, wash and dry the lettuce leaves. Slice the tomato into thin rounds.

Toast the Bread (Optional)
If desired, lightly toast the slices of sourdough bread in a toaster or on a skillet until golden brown.

Assemble the Sandwich
Spread a generous amount of pimento cheese on two slices of sourdough bread. Top with lettuce leaves and tomato slices. Place the remaining slices of bread on top to complete the sandwich.

Cut the sandwiches in half if desired, and serve immediately.
