Mix the Dip Ingredients
In a large mixing bowl, combine the cream cheese, sour cream, mayonnaise, garlic powder, onion powder, salt, and black pepper. Mix well until smooth.

Add Caramelized Onions
Once the onions are caramelized, allow them to cool slightly, then fold them into the cream cheese mixture. Stir in the fresh chives.

Chill the Dip
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare the Vegetables
Wash and peel the carrots and slice them into thin sticks. Chop the celery stalks into bite-sized pieces. Slice the bell pepper into strips and cut the cucumber into rounds. Arrange the vegetables on a serving platter.

Fry the Chips
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the potato slices in batches, frying until golden and crispy, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.

Sprinkle the fried potato chips with salt to taste while they are still warm.
