Prepare the Lentils
Rinse lentils under cold water and remove any debris or stones.

Cook the Lentils
In a medium saucepan, combine lentils, water or vegetable broth, minced garlic, bay leaf, salt, and black pepper. Bring to a boil over high heat.

Simmer the Lentils
Once boiling, reduce heat to low, cover, and let it simmer for 25-30 minutes or until lentils are tender.

Finish the Lentils
Remove from heat, discard the bay leaf, and drizzle with olive oil before serving.
Pan Roasted Redfish

Marinate the Redfish
In a bowl, mix together olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Place redfish fillets in the marinade and let sit for 15-20 minutes.

Preheat the Pan
Heat a large skillet over medium-high heat. Add a tablespoon of olive oil.

Cook the Redfish
Once the oil is hot, carefully place the marinated redfish fillets in the skillet. Cook for 4-5 minutes on each side until golden brown and cooked through.

Garnish the Redfish
Remove the fillets from the skillet and sprinkle with chopped fresh parsley before serving.
