Method

Burger Patty Preparation

    Make the Patties

    In a bowl, mix together the brisket and chuck beef. Season with salt and black pepper. Form into two equal-sized patties, about 1 inch thick.

    Grill the Patties

    Preheat your grill or grill pan over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness. Place a slice of cheddar cheese on each patty during the last minute of cooking to melt.

    Prepare the Onions

    Slice the large onion into thin rings. In a skillet, melt 1 tablespoon of butter over medium heat. Add the onions and cook until they are golden brown and caramelized, about 10-15 minutes.

    Toast the Buns

    In the same skillet, add another tablespoon of butter and toast the brioche buns until golden brown.

Pommes Frites Preparation

    Cut and Soak Potatoes

    Peel the large potatoes and cut them into thin strips. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Drain the potatoes and dry them thoroughly. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, sprinkling with salt immediately.

Au Poivre Sauce Preparation

    Make the Sauce

    In a saucepan, melt 1 tablespoon of butter over medium heat. Add the black peppercorns and cook for 1 minute. Pour in the heavy cream, bringing it to a simmer. Cook for 5 minutes until slightly thickened. Season with salt to taste.

Assembly

    Assemble the Burger

    On the bottom half of each toasted brioche bun, place the grilled patty with melted cheddar. Top with caramelized onions and pickles. Cover with the top half of the brioche bun.

    Serve

    Serve the burgers alongside a generous portion of pommes frites and drizzle with au poivre sauce over the fries or on the side.
