Bacon Jam Preparation

Cook the Bacon
In a medium skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

Sauté the Onions
In the same skillet, remove excess bacon grease, leaving about 1 tablespoon. Add the chopped onions and sauté until soft and translucent, about 5 minutes.

Combine Ingredients
Add the crispy bacon, brown sugar, maple syrup, apple cider vinegar, and black pepper to the skillet. Stir well to combine.

Simmer the Jam
Reduce heat to low and let the mixture simmer for about 15 minutes, stirring occasionally, until the mixture thickens. Remove from heat and let cool.

Prepare the Patties
In a bowl, mix the ground beef with salt and black pepper. Form into two equal patties.

Add Cheese
In the last minute of cooking, place a slice of cheddar cheese on each patty and cover the skillet to melt the cheese.

Toast the Buns
While the patties are cooking, toast the brioche buns in a separate skillet or toaster until golden brown.

Assemble the Burger
Place each cheese-topped patty on a toasted brioche bun. Top with a generous spoonful of bacon jam. Close the burger with the other half of the bun.
