    Prepare the vegetables

    Wash the fresh spinach under cold water and pat dry with a paper towel. Slice the mushrooms thinly.

    Beat the eggs

    In a medium bowl, crack the eggs and add milk, salt, and black pepper. Whisk until well combined and fluffy.

    Sauté the vegetables

    In a non-stick skillet, heat olive oil or butter over medium heat. Add the sliced mushrooms and sauté for about 3-4 minutes until they are soft. Add the spinach and cook for an additional 1-2 minutes until wilted. Remove the mixture from the skillet and set aside.

    Cook the omelette

    In the same skillet, pour in the beaten egg mixture. Allow it to cook undisturbed for about 2-3 minutes until the edges start to set. Gently lift the edges with a spatula to allow uncooked eggs to flow underneath.

    Add filling

    Once the omelette is mostly set but still slightly runny on top, add the sautéed spinach and mushrooms evenly over half of the omelette. Crumble goat cheese over the filling.

    Fold and serve

    Carefully fold the omelette in half over the filling. Let it cook for an additional minute to allow the cheese to melt. Slide the omelette onto a plate and serve immediately.
