Marinating Chicken

    Prepare the Marinade

    In a large bowl, combine buttermilk, hot sauce, garlic powder, salt, and black pepper. Stir well until mixed.

    Marinate the Chicken

    Add the chicken thighs to the bowl of marinade. Ensure all pieces are coated. Cover and refrigerate for at least 2 hours, or overnight for maximum flavor.

Frying the Chicken

    Prepare the Coating

    In a separate bowl, whisk together flour, cornstarch, paprika, onion powder, cayenne pepper, salt, and black pepper.

    Heat the Oil

    In a deep skillet or fryer, heat oil to 350°F (175°C). Make sure there is enough oil to fully submerge the chicken thighs.

    Coat the Chicken

    Remove chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere.

    Fry the Chicken

    Carefully place the coated chicken thighs into the hot oil. Fry for about 7-8 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Making the Hot Honey Glaze

    Combine Honey and Hot Sauce

    In a small saucepan over low heat, mix honey and hot sauce. Stir until well combined and warmed through, about 2-3 minutes.

Assembly

    Prepare the Buns

    Toast the brioche buns lightly if desired. Spread mayonnaise on the bottom half of each bun.

    Assemble the Sandwich

    Place a piece of fried chicken on each bun, drizzle generously with the hot honey glaze, and top with lettuce and pickles. Place the top bun on each sandwich.
