Croquettes

Pickled Cranberries

Honey Drizzle

Method

Croquettes

  1. 1

    Prepare the Mixture

In a mixing bowl, combine the goat cheese and cream cheese. Mix until smooth and creamy.

  2. 2

    Season the Mixture

Add salt and black pepper to the cheese mixture. Stir until well combined.

  3. 3

    Shape the Mixture

Scoop out a tablespoon of the mixture and form it into a ball. Repeat until all the mixture is used.

  4. 4

    Coat the Croquettes

Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Roll each cheese ball in flour, dip in egg, and coat with panko breadcrumbs.

  5. 5

    Fry the Croquettes

In a large skillet, heat vegetable oil over medium heat. Fry the croquettes in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Pickled Cranberries

  1. 6

    Prepare the Pickling Liquid

In a saucepan, combine apple cider vinegar, sugar, water, cinnamon stick, and cloves. Bring to a simmer over medium heat, stirring until the sugar is dissolved.

  2. 7

    Pickle the Cranberries

Add cranberries to the simmering pickling liquid. Remove from heat and let cool to room temperature.

  3. 8

    Refrigerate

Transfer the cranberries and pickling liquid to a jar and refrigerate for at least 2 hours or overnight.

Honey Drizzle

  1. 9

    Prepare the Drizzle

Simply measure out the honey and set aside for serving.
