Chips Preparation

    Slice the Potatoes

    Wash and peel the russet potatoes. Using a mandoline or a sharp knife, slice the potatoes into thin rounds, about 1/8 inch thick.

    Fry the Chips

    In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the potato slices in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and pepper to taste.

    Mix the Cheese Ingredients

    In a mixing bowl, combine the blue cheese, cream cheese, sour cream, and garlic powder. Use a fork or a hand mixer to blend the ingredients until smooth and creamy.

    Stir in the chopped chives and lemon juice. Mix until well incorporated. Adjust seasoning with more salt or pepper if desired.
