Caramelized Onions

Prepare the Onions
Peel and slice the yellow onions thinly.

Cook the Onions
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sprinkle with salt and sugar. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 20-25 minutes.

Deglaze the Pan
Add the balsamic vinegar to the skillet and stir, scraping up any brown bits from the bottom. Cook for an additional 2-3 minutes, then remove from heat.

Prepare the Broth
In a pot, combine the beef broth, thyme, and bay leaf. Bring to a simmer over medium heat and season with salt and black pepper to taste. Allow to simmer for 15-20 minutes.

Heat the Oil
In a deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the potato slices to the hot oil in batches, frying until they are golden and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.
