Method

Caramelized Onions

    Prepare the Onions

    Peel and slice the yellow onions thinly.

    Cook the Onions

    In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sprinkle with salt and sugar. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 20-25 minutes.

    Deglaze the Pan

    Add the balsamic vinegar to the skillet and stir, scraping up any brown bits from the bottom. Cook for an additional 2-3 minutes, then remove from heat.

French Onion Broth

    Prepare the Broth

    In a pot, combine the beef broth, thyme, and bay leaf. Bring to a simmer over medium heat and season with salt and black pepper to taste. Allow to simmer for 15-20 minutes.

House-Fried Potato Chips

    Prepare the Potatoes

    Wash and thinly slice the russet potatoes using a mandoline or sharp knife.

    Heat the Oil

    In a deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add the potato slices to the hot oil in batches, frying until they are golden and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.

Grilled Cheese Assembly

    Assemble the Sandwich

    Butter one side of each slice of sourdough bread. Place one slice butter-side down in a skillet, top with a layer of gruyere cheese, a generous amount of caramelized onions, and another layer of gruyere. Top with another slice of bread, butter-side up.

    Grill the Sandwich

    Cook on medium heat for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Cut the grilled cheese in half and serve with a bowl of hot french onion broth for dipping, alongside the house-fried potato chips.
