Prepare the Romaine Lettuce
Wash the romaine lettuce thoroughly under cold running water. Remove any wilted or damaged outer leaves. Pat dry with a paper towel or use a salad spinner to remove excess water. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

Grate the Parmesan
Using a box grater or a food processor, grate the aged Parmesan cheese until you have about 0.5 cups. Set aside.

Fry the Saltines
In a medium-sized skillet, heat the vegetable oil over medium heat. Once the oil is hot, add the saltine crackers in batches without overcrowding the pan. Fry them for about 1-2 minutes on each side until they are golden brown and crispy. Use a slotted spoon to remove the fried saltines and place them on a paper towel-lined plate to drain excess oil.

Combine the Ingredients
In the bowl with the romaine lettuce, add the grated aged Parmesan cheese. Gently toss the ingredients together until the lettuce is evenly coated with cheese.

Top with Fried Saltines
Sprinkle the fried saltines over the top of the salad just before serving to maintain their crunch. Serve immediately.
