Prepare the Custard

    Heat the Cream

    In a medium saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not bring to a boil.

    Mix Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and 1 cup of granulated sugar until the mixture is pale and slightly thickened.

    Combine Mixtures

    Remove the saucepan from heat. Gradually pour the hot cream into the egg yolk mixture, whisking constantly to prevent the yolks from scrambling.

    Add Vanilla

    Stir in the vanilla extract until well combined.

    Strain the Mixture

    Pour the mixture through a fine-mesh sieve into a clean bowl to remove any cooked egg bits.

Bake the Custards

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Prepare Ramekins

    Place six ramekins in a large baking dish. Pour the custard mixture evenly into the ramekins.

    Add Water Bath

    Carefully pour hot water into the baking dish around the ramekins, ensuring the water comes about halfway up the sides of the ramekins.

    Bake in the preheated oven for 30-35 minutes, or until the edges are set but the center is still slightly jiggly. Remove from the oven and let cool.

    Refrigerate the custards for at least 2 hours, or overnight for best results.

Caramelize the Sugar

    Once the custards are chilled, sprinkle 1 tablespoon of granulated sugar evenly over the top of each custard.

    Using a kitchen torch, carefully caramelize the sugar until it melts and turns golden brown. If you do not have a torch, place the ramekins under the broiler for about 1-2 minutes, watching closely to prevent burning.
