Crawfish & BBQ Sauce

Prepare the Grits

Boil Water
In a large saucepan, bring 4 cups of water to a boil over medium-high heat. Add 1 tsp of salt.

Add Grits
Once the water is boiling, gradually whisk in 1 cup of stone-ground grits. Reduce heat to low and cover.

Cook Grits
Cook the grits for about 20-25 minutes, stirring occasionally, until thick and creamy.

Prepare Crawfish & BBQ Sauce

Sauté Garlic
In a large skillet, heat 1 tbsp of olive oil over medium heat. Add 2 minced garlic cloves and sauté for about 1 minute until fragrant.

Add Crawfish
Add 1 lb of crawfish tails to the skillet and sauté for 3-4 minutes until heated through.

Add BBQ Sauce
Pour in 1 cup of New Orleans BBQ sauce, stirring to combine. Cook for another 3-5 minutes, allowing the sauce to thicken slightly.

Season
Add 1 tsp of black pepper, 1 tsp of cayenne pepper, and stir well. Finally, add the chopped green onions and cook for an additional 2 minutes.
