Preparation of Potatoes

    Wash and Peel

    Wash the potatoes thoroughly under cold water. Peel the skin off using a vegetable peeler.

    Slice the Potatoes

    Using a sharp knife or a mandoline slicer, cut the potatoes into thin slices, about 1/8 inch thick.

Frying the Chips

    Heat the Oil

    In a large, deep pot, pour the vegetable oil and heat it over medium-high heat until it reaches about 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potato Slices

    Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 3-4 minutes.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and any optional seasonings to taste.
