Method

Preparation

  1. 1

    Prepare the Carrots

Peel and chop the carrots into smaller pieces for easier cooking.

  2. 2

    Cook the Carrots

In a large pot, add the chopped carrots and enough water to cover them. Bring to a boil and cook until the carrots are tender, about 15-20 minutes. Drain and let cool slightly.

  3. 3

    Mash the Carrots

Using a potato masher or a food processor, mash the cooked carrots until smooth. Measure out 4 cups for the souffle.

Mixing

  1. 4

    Combine Ingredients

In a large mixing bowl, combine the mashed carrots, sugar, melted butter, eggs, flour, baking powder, vanilla extract, and salt. Mix until well combined and smooth.

Baking

  1. 5

    Prepare the Baking Dish

Preheat your oven to 350°F (175°C). Grease a 2-quart souffle dish or casserole dish with butter.

  2. 6

    Pour Mixture into Dish

Pour the carrot mixture into the prepared dish, smoothing the top with a spatula.

  3. 7

    Bake the Souffle

Bake in the preheated oven for 45-50 minutes, or until the souffle is set and the top is lightly golden.

  4. 8

    Optional Topping

If desired, sprinkle the brown sugar and cinnamon on top of the souffle during the last 10 minutes of baking for a sweet crust.

Serving

  1. 9

    Serve the Souffle

Remove the souffle from the oven and let it cool for a few minutes before serving. Cut into wedges and enjoy warm.
