For the Croque Madame

    Prepare the Croque Madame

    Preheat your oven to 180°C (350°F). In a small saucepan, melt 2 tablespoons of butter over medium heat. Add 1 tablespoon of flour and whisk for about 2 minutes until it turns golden. Gradually add 120 ml of milk, stirring continuously until the mixture thickens. Season with 0.5 tsp of salt and 0.25 tsp of black pepper.

    Assemble the Sandwich

    On one slice of brioche, spread a layer of the thickened mixture. Place a slice of ham and a layer of Gruyère cheese on top. Cover with another slice of brioche. Repeat for the second sandwich.

    Cook the Sandwiches

    In a skillet, melt a little butter over medium heat. Add the assembled sandwiches and cook until golden brown on both sides, about 3-4 minutes each side. Transfer to a baking dish.

    Cook the Eggs

    In the same skillet, fry the eggs sunny-side up until the whites are set but the yolks remain runny.

    Top with Egg

    Place a fried egg on top of each sandwich and set aside while you prepare the candied topping.

    Make the Candied Topping

    In a saucepan, combine 100g of sugar and 50ml of water. Stir over medium heat until the sugar dissolves. Increase the heat and boil without stirring until the mixture turns a light amber color, about 5-7 minutes.

    Finish the Topping

    Remove from heat and carefully stir in 1 tablespoon of butter, 1 teaspoon of vanilla extract, and 0.5 tsp of sea salt. Allow to cool slightly.

    Drizzle & Serve

    Drizzle the candied topping over the Croque Madame sandwiches with the fried eggs on top. Serve immediately.
