Marinate the Fish
In a bowl, mix together olive oil, paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt. Coat the redfish fillets thoroughly with the marinade and let sit for at least 30 minutes.

Cook the Fish
Heat a skillet over medium-high heat. Once hot, add the marinated redfish fillets and cook for about 4-5 minutes on each side or until blackened and cooked through. Remove from heat and set aside.

Assemble the Sandwich
On the un-toasted side of 4 slices of sourdough, spread a generous amount of Thousand Island dressing. Layer the sauerkraut on top, followed by a slice of Swiss cheese and the cooked blackened redfish. Top with another slice of Swiss cheese and finally, cover with the remaining slices of sourdough.

Fry the Chips
In a large pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the potato slices in batches, frying until golden and crispy, about 3-4 minutes. Remove with a slotted spoon and place on paper towels to drain excess oil. Season with salt immediately.
