    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Mix Dry Ingredients

    In a large mixing bowl, combine all-purpose flour, baking powder, salt, and granulated sugar.

    Mix Wet Ingredients

    In another bowl, whisk together milk, eggs, and melted butter until well combined.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.

Filling

    Sauté Spinach

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds.

    Add Spinach and Tomatoes

    Add chopped spinach and halved cherry tomatoes to the skillet. Cook until the spinach wilts, about 3-4 minutes.

    Sprinkle in black pepper and crushed red pepper flakes, stirring well to combine.

    Incorporate Cheese

    Remove the skillet from heat and add crumbled feta cheese, stirring gently to incorporate.

Assembly

    Grease a 9x13 inch baking dish with butter or non-stick spray.

    Spread half of the batter into the bottom of the prepared baking dish. Then, layer the spinach and feta mixture on top.

    Spread the remaining batter over the spinach filling evenly.

Baking

    Sprinkle grated Parmesan cheese over the top of the batter.
