Making the Biscuits
Preheat your oven to 450°F (230°C). In a large bowl, mix together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk and buttermilk until just combined. Turn the dough out onto a floured surface and knead gently. Roll or pat to about 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 10-12 minutes until golden brown.

Making the Gravy
In a skillet over medium heat, cook the sausage until browned, breaking it apart as it cooks. Sprinkle the flour over the cooked sausage and stir to combine. Gradually add the milk, whisking to prevent lumps. Cook until the gravy thickens, about 5-7 minutes. Season with black pepper and salt to taste.

Serving
To serve, split the warm biscuits in half and ladle the sausage gravy generously over the top.
