Cooking Instructions

1

Prepare the Beef

Cut the beef chuck roast into large cubes and season with salt and black pepper.

2

Brown the Beef

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove the beef and set aside.

3

Sauté the Vegetables

In the same pot, add butter and sauté the onions, carrots, and garlic until softened, about 5 minutes.

4

Add the Wine

Pour in the red wine and scrape up any browned bits from the bottom of the pot. Bring to a simmer.

5

Combine Ingredients

Return the beef to the pot. Add beef broth, thyme, bay leaf, and mushrooms. Stir to combine.

6

Simmer

Bring to a boil, then reduce heat to low. Cover and let simmer for 2 to 2.5 hours, or until the beef is tender.

7

Serve

Taste and adjust seasoning with salt and pepper if necessary. Serve hot with crusty bread or over mashed potatoes.
