Method

Preparing the Octopus

    Clean the Octopus

    Rinse the whole octopus under cold water, removing any ink sacs or debris. Pat dry.

    Marinate

    In a bowl, rub the octopus with olive oil, sea salt, and the juice of half a lemon. Let it marinate for at least 30 minutes.

    Fire Up the Grill

    Prepare a wood-fired grill. Ensure the grill is hot before cooking the octopus.

    Grill the Octopus

    Place the marinated octopus on the grill and cook for about 20-25 minutes, turning occasionally until charred and tender.

Making Tomato Ragu

    Sauté Onion and Garlic

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

    Add Tomatoes and Seasoning

    Pour in the canned crushed tomatoes, add dried oregano, salt, and black pepper. Stir well.

    Simmer the Ragu

    Reduce heat and let the sauce simmer for 20-25 minutes until thickened. Stir in fresh chopped basil before serving.

Preparing Fresno Chile Agro Dolce

    Cook the Chiles

    In a small saucepan, combine sliced Fresno chiles, sugar, white vinegar, and salt. Bring to a simmer over medium heat.

    Let the mixture simmer for about 10 minutes, stirring occasionally until the chiles are slightly tender and the mixture thickens.

Making Basil Pesto

    Blend Ingredients

    In a food processor, combine fresh basil leaves, garlic cloves, pine nuts, and Parmesan cheese. Pulse until finely chopped.

    Add Olive Oil

    With the processor running, slowly drizzle in olive oil until the mixture is smooth. Season with salt to taste.
