Prepare the Tomato Sauce
In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the San Marzano tomatoes and salt. Bring to a simmer and cook for about 15 minutes, stirring occasionally, until the sauce thickens slightly. Add 5 fresh basil leaves and stir to combine. Remove from heat and let cool.

Roll Out the Dough
Preheat your oven to its highest setting (usually around 250°C or 482°F). On a floured surface, take 250 grams of pizza dough and roll it into a thin circle, approximately 10 inches in diameter. Transfer the rolled dough to a parchment-lined baking sheet.

Add Sauce and Cheese
Spread the prepared San Marzano tomato sauce evenly over the surface of the rolled dough, leaving a small border around the edges. Tear the fior di latte cheese into small pieces and scatter them over the sauce.

Bake the Pizzetta
Drizzle the top with 1 tablespoon of extra virgin olive oil and place the pizzetta in the preheated oven. Bake for 8-10 minutes, or until the crust is golden and the cheese is bubbling.

Garnish and Serve
Remove the pizzetta from the oven and top with the remaining 8 fresh basil leaves. Allow it to cool for a minute, then slice and serve immediately.
