Wash and Prepare the Lemons

Thoroughly wash the lemons under warm water to remove any wax or impurities. Pat them dry with a clean towel.

Zest the Lemons

Using a vegetable peeler or a zester, carefully remove the zest from the lemons. Be sure to only take the yellow outer layer and avoid the white pith, as it can make the limoncello bitter.

Combine Zest and Alcohol

In a large glass jar or container, combine the lemon zest with the grain alcohol. Seal the jar tightly and let the mixture steep in a cool, dark place for at least 7 days, shaking it gently every few days to mix the flavors.

Prepare the Simple Syrup

After 7 days, prepare a simple syrup by combining the granulated sugar and water in a saucepan. Heat over medium heat, stirring until the sugar has completely dissolved. Allow the syrup to cool to room temperature.

Strain the Mixture

Once the lemon zest has steeped for at least a week, strain the mixture through a fine mesh strainer or cheesecloth into a clean bowl or pitcher, discarding the lemon zest.

Combine Syrup and Infused Alcohol

Mix the cooled simple syrup with the strained lemon-infused alcohol in a large bottle or jar. Stir gently to combine.

Bottle and Chill

Transfer the limoncello to clean bottles, seal them, and store in the freezer. Limoncello is best served chilled.
