Place the cut potatoes into a large bowl of cold water. Let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

After soaking, drain the water and spread the potato strips on a clean kitchen towel or paper towels. Pat them dry to remove any excess moisture.
