Pasta Preparation

Cook the Fettuccine
Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Sauté the Chicken
While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and black pepper. Add the chicken to the skillet and cook for 6-7 minutes on each side, or until the chicken is cooked through and golden brown. Remove from the skillet and let it rest for a few minutes before slicing.

Make the Alfredo Sauce
In the same skillet used for the chicken, reduce the heat to medium. Add the butter and let it melt. Stir in the minced garlic and cook for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, salt, and black pepper, and continue to stir until the cheese has melted and the sauce is smooth.

Combine with Pasta
Add the drained fettuccine to the sauce, tossing to coat. If the sauce is too thick, add a little reserved pasta water until the desired consistency is reached. Mix in chopped parsley.

Serve the Dish
Slice the sautéed chicken and place it on top of the fettuccine Alfredo. Serve immediately with extra Parmesan cheese and parsley if desired.
