Method
Preparing the Salad

Chop the Romaine
Wash and chop the romaine lettuce into bite-sized pieces. Place in a large mixing bowl.

Prepare the Vegetables
Halve the cherry tomatoes, finely chop the red onion, and pit and slice the olives. Add these to the bowl with the romaine.

Add Chickpeas and Pepperoncini
Rinse and drain the chickpeas, then add them to the bowl along with the sliced pepperoncini.
Adding Meats and Cheese

Slice the Meats
Thinly slice the salame sweet and hot soppressata. Add to the salad mixture.

Add Mozzarella
Cube or tear the mozzarella into small pieces and add to the salad bowl.
Making the Vinaigrette

Combine Vinaigrette Ingredients
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.

Dress the Salad
Pour the vinaigrette over the salad ingredients in the mixing bowl and toss well to coat everything evenly.
Serving the Salad

Serve the chopped salad immediately, or refrigerate for up to an hour before serving to allow flavors to meld.
