Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring occasionally until smooth. Remove from heat and set aside.

Combine Coconut Cream and Sugar
In a saucepan, combine the coconut cream and sugar over medium heat. Stir until the sugar is dissolved and the mixture is heated through, but not boiling.

Mix Cornstarch
In a small bowl, mix the cornstarch with a few tablespoons of the warm coconut cream mixture to create a slurry. This will help prevent lumps when adding it to the saucepan.

Thicken the Mixture
Pour the cornstarch slurry back into the saucepan with the coconut cream mixture. Continuously stir to combine, and continue cooking for about 5-7 minutes until the mixture thickens.

Incorporate Chocolate
Add the melted dark chocolate, vanilla extract, and a pinch of salt to the thickened coconut cream mixture. Stir well until fully combined and smooth.
Serving

Chill the Pudding
Pour the chocolate coconut pudding into serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours or until set.
