Prepare the tomatoes
Wash the heirloom tomatoes thoroughly, then slice them into thick rounds or wedges. Place the sliced tomatoes in a large bowl.

Marinate the tomatoes
Drizzle the sliced tomatoes with 1 tablespoon of extra virgin olive oil and sprinkle with sea salt and freshly ground black pepper. Toss gently to coat the tomatoes evenly. Let them marinate for at least 15 minutes to enhance the flavors.

Prepare the mozzarella
While the tomatoes are marinating, slice the mozzarella di bufala into thick rounds. Set aside.

Combine ingredients
After the tomatoes have marinated, layer them on a serving platter. Alternate layers of tomato slices with the mozzarella slices.

Add basil and dressing
Tuck fresh basil leaves in between the layers of tomatoes and mozzarella. Drizzle the remaining 1 tablespoon of olive oil and the aged Modena balsamic saba over the salad.

Serve
Finish with an additional sprinkle of sea salt and freshly ground black pepper to taste. Serve immediately as a refreshing appetizer or side dish.
