Salad Preparation

Prepare the Lettuce
Wash and dry the romaine lettuce thoroughly. Tear it into bite-sized pieces and place it in a large salad bowl.

Make Croutons
Preheat your oven to 375°F (190°C). Cut the focaccia bread into small cubes. Place the cubes on a baking sheet and drizzle with olive oil and a pinch of salt. Bake for about 10-15 minutes or until golden and crispy. Remove from oven and let cool.

Add Cheese
Grate the Parmesan cheese and set aside for topping the salad.
Dressing Preparation

Make the Dressing
In a small bowl, mash the garlic and anchovy fillets together to form a paste. Add the lemon juice, Dijon mustard, and Worcestershire sauce. Whisk in the olive oil gradually until the dressing is emulsified. Season with salt and black pepper to taste.
Assembly

Combine Ingredients
Pour the dressing over the romaine lettuce and toss gently to coat evenly. Add the focaccia croutons and toss again.

Top with grated Parmesan cheese and serve immediately.
