Prepare the Peach Puree

    Step 1: Prepare the Peaches

    Wash the white peaches thoroughly, then cut them in half and remove the pits. You can peel the peaches if you prefer a smoother puree.

    Step 2: Blend the Ingredients

    In a blender, combine the chopped peaches, sugar, and lemon juice. Blend until you achieve a smooth puree. Taste the puree and adjust the sweetness by adding more sugar if desired.

    Step 3: Strain the Puree (Optional)

    If you prefer a finer texture, you can strain the puree through a fine-mesh sieve to remove any pulp or skin.

Mix the Bellini

    Step 4: Combine the Ingredients

    In a champagne flute or a tall glass, add about 2-3 tablespoons of the peach puree.

    Step 5: Add Prosecco

    Slowly pour the prosecco into the glass over the peach puree. Allow the bubbles to settle before adding more prosecco to fill the glass.

    Use a spoon to gently stir the mixture to combine the puree and prosecco without losing the bubbles.
