Gelato Preparation

Make the Base
In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar is dissolved and the mixture is hot but not boiling.

Thicken the Mixture
Cook the mixture over low heat, stirring constantly until it thickens enough to coat the back of a spoon, about 10-15 minutes.

Flavor the Gelato
Remove from heat and stir in the vanilla extract. Divide the mixture into four bowls.

Chill the Mixture
Cover each bowl with plastic wrap and refrigerate until completely chilled, at least 4 hours or overnight.

Churn the Gelato
Once chilled, churn each flavor in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze Gelato
Transfer each flavor of gelato into an airtight container and freeze until firm, about 2-4 hours.
Chocolate Dipping

Melt Chocolate
In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until melted and smooth.
Assembly

Fill Cones
Take the mini ice cream cones and fill each with a scoop of chocolate, vanilla, strawberry, and pistachio gelato, alternating flavors as desired.

Dip in Chocolate
Dip the top of each filled cone into the melted chocolate mixture, allowing excess chocolate to drip off.

Set the Dipped Cones
Place the dipped cones upright in a cup or cone holder to allow the chocolate to set. You can refrigerate for faster setting.
