Grilled Vegetables

    Prepare Artichokes

    Trim the artichokes by removing the tough outer leaves and cutting off the top. Slice them in half and remove the fuzzy choke. Soak in lemon water to prevent browning.

    Grill Artichokes

    Preheat a grill over medium-high heat. Toss the artichoke halves with 2 tablespoons of olive oil, salt, and black pepper. Grill cut-side down for about 5-7 minutes, then turn and grill for another 5-7 minutes until tender. Remove from heat.

    Prepare Bell Peppers

    Cut the bell peppers in half, remove the seeds, and brush with 1 tablespoon of olive oil. Season with salt and black pepper.

    Grill Bell Peppers

    Place the bell peppers on the grill skin-side down. Grill for about 7-10 minutes until charred and tender. Remove and set aside.

Assemble Platter

    Arrange Ingredients

    On a large serving platter, arrange the grilled artichokes and bell peppers. Drape the prosciutto, sweet salame, and hot soppressata around the vegetables.

    Add Cheeses

    Cut the Parmigiano Reggiano and Fontina into chunks or slices and add them to the platter.

    Serve

    Drizzle the remaining olive oil over the platter and serve with a selection of olives on the side. Enjoy your Antipasti Misti!
