Preparation
Clean the Mussels
Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Discard any mussels that are open and do not close when tapped.
Prepare the Broth
In a large pot, combine coconut milk, Tom Yum paste, vegetable broth, and lime juice. Stir well to combine and bring to a simmer over medium heat.
Cooking
Steam the Mussels
Once the broth is simmering, add the cleaned mussels to the pot. Cover and steam for about 5-7 minutes, or until the mussels have opened.
Garnish and Serve
Remove from heat and stir in the Thai basil leaves and sliced chili peppers. Serve immediately with the broth.
