Cooking Halibut and Vegetables

Prepare the Halibut

Preheat your oven to 375°F (190°C). Season the Pacific halibut fillets with salt and pepper. Place them on a baking sheet and bake for 12-15 minutes or until the fish flakes easily with a fork.

Sauté the Vegetables

While the fish is baking, heat a little olive oil in a skillet over medium heat. Add the shishito peppers and sauté for about 5 minutes until blistered. Add the English peas and fava beans, cooking for an additional 3-4 minutes. Season with salt and pepper to taste.

Making the Lemon Foam

Prepare the Lemon Foam

In a saucepan, combine lemon juice, sugar, and heavy cream. Heat gently until the sugar dissolves. Remove from heat and let cool slightly. Add soy lecithin and blend with an immersion blender until foamy.

Plating

Serve

On a plate, place the baked halibut, top with sautéed vegetables, and spoon the lemon foam over the top. Garnish with a lemon wedge and serve immediately.
