Prepare the Maitake Mushrooms

Clean the maitake mushrooms by gently brushing off any dirt. Tear them into bite-sized pieces.

Sauté the Mushrooms

In a skillet, heat a tablespoon of olive oil over medium heat. Add the maitake mushrooms and sauté for about 5-7 minutes until they are golden brown and tender.

Add Honey and Flavors

Reduce the heat to low and drizzle the chestnut honey over the sautéed mushrooms. Stir gently to coat the mushrooms and allow the honey to caramelize slightly, about 2-3 minutes.

Incorporate Metaxa

Remove the skillet from heat and carefully add the Metaxa 12. Return to low heat and allow the alcohol to evaporate for about 2 minutes while stirring.

Off the heat, add the apple geranium leaves and bergamot zest to the mixture. Toss gently to combine.
