Method

Prepare the Panisse

Make the Chickpea Batter

In a saucepan, bring water to a boil. Add salt and gradually whisk in chickpea flour until smooth. Cook over medium heat, stirring constantly until the mixture thickens, about 10 minutes.

Set the Panisse

Pour the mixture into a greased dish and spread evenly. Allow it to cool and set for at least 1 hour.

Cut and Fry

Once set, cut the panisse into desired shapes (squares or rectangles). Heat olive oil in a skillet over medium-high heat and fry the panisse until golden brown on all sides. Set aside.

Prepare the Vegetables

Caramelize the Salsify and Root Vegetables

Peel and slice the salsify and root vegetables. In a large skillet, heat olive oil over medium heat. Add the vegetables, season with salt and pepper, and sauté until tender and caramelized, about 15-20 minutes.

Sauté the Mushrooms

Cook the Maitake Mushrooms

In another skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add maitake mushrooms, season with salt and pepper, and cook until tender, about 5-7 minutes.

Plate the Dish

Assemble the Dish

On a platter, arrange the chickpea panisse, top with caramelized salsify and root vegetables, and finish with sautéed maitake mushrooms. Serve warm.
