Prepare the Ingredients

Gather all the ingredients. If you don't have chive oil, you can make it by blending fresh chives with olive oil and straining it.

Chill the Glass

Place your martini glass in the freezer or fill it with ice water to chill.

Mix the Martini

In a mixing glass, combine the dry gin, house vermouth, and kombu. Fill the mixing glass with ice and stir gently for about 30 seconds.

Strain and Serve

Remove the ice from the chilled martini glass. Strain the mixture into the glass.

Garnish

Drizzle chive oil on top of the martini and garnish with sea asparagus stalks.
