Cactus Cut Potatoes

    Prep potatoes

    Wash and scrub the potatoes well. Using a mandoline set to a thin setting (about 1.5–2 mm) or a very sharp knife, slice potatoes into very thin rounds. Keep slices as even as possible for uniform frying.

    Rinse and soak

    Place the potato slices in a large bowl and cover with cold water (about 500 ml). Agitate gently with your hands for 30 seconds to release surface starch. Drain and refill with fresh cold water; let soak for 20–30 minutes. For crisper results, transfer to an ice bath for the last 5 minutes.

    Dry thoroughly

    Drain the potato slices in a colander and spread them in a single layer on clean kitchen towels or paper towels. Pat very dry—moisture creates oil splatter and prevents crisping. If time allows, let air-dry 10 minutes.

    Coat

    In a large bowl, combine cornstarch, smoked paprika, cayenne, garlic powder, onion powder, 2 tsp fine sea salt, and black pepper. Add potato slices in batches and toss gently to lightly dust each slice with the seasoned cornstarch. Shake off excess; you want a thin dusting, not a thick batter.

    Heat oil

    Pour about 1 L of vegetable oil into a heavy-bottomed pot or deep fryer, leaving at least 5 cm headspace. Heat oil to 175°C (350°F). If you don't have a thermometer, test by dropping one potato slice in: it should sizzle immediately and float.

    Fry in batches

    Carefully add a small handful of coated potato slices to the hot oil, making sure not to overcrowd (work in batches). Fry, stirring gently with a slotted spoon or spider, until the edges turn golden and the centers are crisp, about 2–3 minutes per batch depending on thickness. Thin slices may brown faster—watch closely.

    Drain and season

    Using a slotted spoon, transfer fried potato slices to a wire rack set over a sheet pan or to paper towels to drain. Immediately season with a light sprinkle of fine sea salt while still hot. Repeat frying remaining potatoes, returning oil to temperature between batches.

    Keep warm and serve

    If making ahead, keep fried potatoes warm and crisp in a 90–100°C (200–210°F) oven on a wire rack for up to 20 minutes. Serve hot alongside the cactus dip.

Signature Cactus Dip

    Prepare cactus: If using canned or cooked nopales/prickly pear pads, drain well and finely dice. Pat dry on paper towels to remove excess moisture so the dip doesn't become runny.

    Combine base: In a medium bowl, whisk together Greek yogurt and mayonnaise until smooth.

    Add flavorings: Stir in diced cactus, chopped cilantro, lime juice, minced jalapeño, ground cumin, honey, salt, and black pepper. Taste and adjust seasoning—add more lime for brightness, more honey for sweetness, or more jalapeño for heat.

    Chill and finish: Cover and refrigerate the dip for at least 30 minutes to allow flavors to meld. Before serving, stir and garnish with thinly sliced green onion.
