Method
Apple Filling
- 1
Preheat
Preheat the oven to 350°F (175°C). Butter or lightly grease a 9-inch (23 cm) round or 8x8-inch baking dish.
- 2
Prepare the apples: Peel, core, and thinly slice 6 medium Granny Smith apples so slices are about 1/8-inch thick. Place slices in a large mixing bowl.
- 3
Toss the apples with 1 tablespoon granulated sugar, 1 tablespoon light brown sugar, 1 tablespoon all-purpose flour, 1 teaspoon ground cinnamon, 1 teaspoon ground nutmeg, 1 tablespoon lemon juice, and a pinch of salt. Mix until evenly coated and the flour is distributed — the flour helps thicken juices while baking.
- 4
Transfer the coated apple slices into the prepared baking dish, arranging them in an even layer and pressing down lightly so juices will bubble up but not overflow.
Crisp Topping
- 5
Combine dry ingredients: In a medium bowl, stir together 1 cup old-fashioned rolled oats, 3 tablespoons all-purpose flour, 3 tablespoons light brown sugar, 1 tablespoon granulated sugar, 1 teaspoon ground cinnamon, and a pinch of salt until evenly mixed.
- 6
Cut in the butter: Add 6 tablespoons cold unsalted butter cut into small cubes. Using a pastry cutter, two forks, or your fingertips, work the butter into the dry mixture until it forms coarse crumbs and some pea-sized pieces remain. This gives a mix of crisp and tender texture.
- 7
Add nuts (optional): Stir in 1 tablespoon chopped walnuts or pecans if using, so nuts are evenly distributed in the topping.
- 8
Top the apples: Evenly sprinkle the crisp topping over the apple layer, covering the fruit with a relatively uniform layer. Gently press some topping into the apples so it adheres but leave some loose crumbs on top for extra crunch.
- 9
Bake: Place the baking dish on a rimmed baking sheet to catch any drips. Bake in the preheated 350°F (175°C) oven for 35–45 minutes, or until the topping is golden brown and the filling is bubbling around the edges. If the topping browns too quickly, loosely tent with foil for the last 10–15 minutes.
- 10
Finish: Remove from oven and allow the apple crisp to rest for 10–15 minutes so the filling thickens slightly.
To Serve
- 11
Serve warm: Spoon portions into bowls and top with vanilla ice cream or a dollop of whipped cream. Drizzle with caramel sauce if desired.
- 12
Storage: Cover leftover apple crisp and refrigerate for up to 3 days. Reheat individual portions in a microwave (30–60 seconds) or reheat the whole dish in a 325°F (160°C) oven for 15–20 minutes until warmed through and topping is crisp.
